Evaporation is the converting of a liquid or a solid into a gas (vapour). Evaporation can happen at any temperature up to the boiling point.

During evaporation the temperature of a liquid is reduced as various molecules within the liquid obtain energy and escape into the air. The temperature of the human body is lowered as sweat evaporates into the air.

Kinetic energy.
Kinetic energy is the energy which a body posseses by virtue of its motion.

When heat is transferred to a liquid the molecules within the liquid begin to move. Liquids are cooled as fast moving molecules escape into the air from the surface of the evaporating liquids. The average kinetic energy of the molecules that remain in an evaporating liquid is reduced as the fastest moving of the molecules escape into the air, causing cooling.

Evaporation and Solutions.
Water is a solvent. When water has something dissolved in it, it becomes a solution. During evaporation water is removed from the solution. Solutions are concentrated as their solvents are removed during evaporation.
